I am considering changing my 16 inch wheels (tyres are 195/55/16) for a set of 17 inch, which size tyres will be best for the 17's? The car is a Corolla T Sport with standard suspension.

the best tyre will be 205 40 17 ones or maybe 215 40 17 but they are more expensive! 205 if you have a budget otherwise 215 will be the best in my opinion!
