Overheating Problems

I have a 1991 Toyota Mr2 2.2 non turbo. When I drive a long distance in the heat my car starts to overheat. But when it is cold at night I'm able to drive longer. I already changed my water pump. At the moment I don't have a thermostat inside of it. When I put one in it began to overheat faster. I can also hear that the fan is coming on. Even the coolant fan switch is new. I have coolant in there as well. Can anyone tell me what's wrong with it? I also replaced the water pump and it still overheats.
