Hello Nick - welcome to Toyota Owners Club.

You will probably need to look at a wheel/tyre size calculator to consider what effect the change in wheels/tyres will have on your car - including the speedometer reading. As reagrds the speedometer you need to bear in mind that it is illegal for a speedo to under-read (ie show that the car is travelling slower than it actually is), and the majority of speedos over-read. An example is here: http://www.etyres.co.uk/tyre-size-calculator

Two other things to consider are:

1) if you change the wheel/tyre size you will need to declare the modification to your insurance company. Depending what the change is the insurance company may accept the change at no further cost, charge an additional premium, or refuse to accept the change.

So once you have an idea of the wheel/tyre size you want to go for, check with your insurance company first.

2) Generally speaking, the lower the profile tyre you use, the harder the ride will be. OK for around town, but on longer journeys, the loss of ride quality could be unwanted.
