Engine Overheating

So i'm driveing along the motorway with the windows down listening to somw cuban music and enjoying the sun, Did about 40 miles, no obviouse signs of a problem (sounds or smells smoke etc) stopped in town for some chinese food came out tried to start the car and...............hey thats not right engine juddering not starting. Turned off look at dials and water temp gauge couldn't be higher. Bonnet up undo the coolent cap thinking better be careful here, glove on and nothing, little bit of steam but not what i expected. I could smell the heat though so started putting water in (had no coolent with me) The water went in and wasn't coming out that i could see but started to rise and fall as if boiling and droping. Going to check it shortly as i just left it in town So my question is. what the hell is happening to my car.
