Temp Gauge

Hi all, can anyone help?

When I'm driving along my temperature gauge drops considerably, but when the engine is running on idle the needle goes up to normal temp which makes me think it's not a stuck thermostat because surely if that was the case then the needle wouldn't move even while idling? Could be wrong though, also the radiator has just been running on water with no coolant in it for a few weeks, could that have anything to do with it?

I reckon there's more to this story. Why was it running with only water? Has there been history of overheating/new radiator/poor heater etc?

It's only been running on water because it's got a very very slow dripping leak and when I need to top it up I've only been topping up with water so all the coolant is long gone, the rad was new about 10 months ago

Also the heater matrix leaked so I bypassed it and yes I had slight overheating but only when water level is low but has never reached red line when overheating

Yeah id also like to know when you have been driving for 30 mins what notch is the Gauge on thanks

It goes up about to the quarter mark maybe just below after about ten minutes of driving then drops to just off the cold mark for the rest of the journey but when it's stationary it goes up to the normal position as normal
