What's the most simple way to add mp3 functionality to my car and keep oridginal head unit?

If your unit is anything like mine (1.4 petrol 2006) the Connects 2 costs just over 30 quid and plugs in the back. It fools the head into thinking there's a cd changer so audio in works, via phono plugs and adapter cable.

Works for me.

as it's only a short drive from home so I collected, also I could check with them that I had the right one.

There are a couple of head units found in the Corolla; mine's W58814 (number is bottom rhs on the front), with differing CD changer connections on the rear..  worth checking yours first. I got the CTVTYX002 which is spot on for mine:
