I think there is a possible tax fiddle that can be used in the dairy industry.  Years ago, I worked for a firm that, among other things, supplied power equipment to a mobile ice cream business.  At a meeting, the proprietor freely admitted that he avoided tax by falsely declaring losses of the product due to various causes - from over-supplying for a day’s demands to failure of equipment (freezer etc.)

As the business grew this became an embarrassment, and he regularly bought major items for his grown up family.

I did have one funny moment when this proprietor rang me to say a power equipment was faulty.  The van fridge would trip the MCB but, when they ran a supply (440v 3 phase) from the main building, the fridge worked OK.  The problem was clear when he said they had to jump on or off the vehicle to avoid electric shock.  I said I would bet they had not fed an earth cable to the van, and he admitted they had not.  I said the fridge was obviously faulty and attaching an earth would also trip the MCB.  He came back later to say I was right!

It started long before that unfortunately. Back in the 1980's, I arrested a juvenile, (14/15 years old), for a burglary. I took him to the nick, interviewed him and he admiited the offence. The Inspector decided to administer a caution. "But he has got four already", says I. "Yes, but they are for different sorts of offences", came back the reply!!
