Dashboard lighting

I can't remember but darkening seems to make sense given that sidelights are usually put on when it's dark. If it's dark outside you want a less bright dashboard to avoid dazzle and protect your 'night vision'.

It depends on the dash - If the dash is illuminated during the day, it's normal for it to dim at night for the reasons AndrueC mentions.

My Fiesta had a typical unlit analogue dial dash, and so would get lit up if I turned the lights on at night. My other cars (All various models of Yaris (Don't judge me!  )) have had illuminated digital dashboards and would be bright during the day to overcome the ambient light, but dim at night to not fry my retinas.
