Parking brake sticking

I have a 2019 Dynamic hybrid AWD and live in a country lane that frequently has deep standing puddles whenever it rains a lot (which has been pretty much every day lately!).  I've noticed that many times when I take the car out first thing, the brakes have stuck as rust has built up.

Am I able to park the car up overnight and leave the brake off without it affecting any sensors etc?  None of my other cars have ever done this (unless they've been standing a long while) but this is the first car I've had with an electronic parking brake.

Yes. The car will automatically apply the electronic handbrake when you put the car into Park and, generally, that is what you want it to do. But, once it has done that you can switch the electronic handbrake off again before you switch off the engine. IIRC the procedure is apply the foot brake, put the selector into Park, wait for the electronic handbrake to come on and switch it off again, release the foot brake and switch off ...

(I tend to do this after I have pressure washed the car to allow the discs to dry with the brakes off for precisely that reason.)

If I remember correct you can disable the automatic parking brake by pushing down the parking brake button (P) and hold it down for a few seconds. It should then beep and confirm that it has been disabled. You then need apply the brake manually when desired.

On the other hand, unless the car stands like this for a long time in wet conditions it doesn't matter much that it sticks. The patch on the discs will wear off with just a few applications of the brake.

So my 2021 PHEV went through a phase where there was a clunk when setting off. I put this down to sticking brakes. It was loud and you felt it. Went on for about 6 months or more. I think it was during a very wet period in what is one of the wettest parts of the UK, and, the car was pretty new. Combo effect.  Eventually it went away.
