I’m thinking about buying a Yaris Hybrid,  but one thing holding me back is that I go on holidays for 6 weeks twice a year and I’m concerned about leaving the car standing that long, will this cause problems with the batteries?

I'd disconnect the Battery prior leaving. 6 weeks is a long time. Alternatives:

a) If the car would sit in your garage, you can use the trickle charger to keep the safe power level in the Battery.

b) If the car would sit outdoor, OBD solar panel might do the trick.

The Yaris is no different to any similar modern car.  I had Battery issues with my Renault Captur if it was left too long.

I fitted a 12v socket on the Battery cover below the rear seat, this socket is always live so a charger can be plugged in using a cigar lighter plug.

Hybrid Battery will be fine, it's the 12v Battery that will not be okay. Used maintenance method highlighted by members above. 6 weeks away will cause any car's 12v Battery to go bad.

Any modern car. Older, or maybe some poverty specs, which don't have all the electronics draining the 12V 24/7 could manage that long.

6 weeks holiday and most cars will be dead and won’t start on return.
With hybrid you will definitely have problems. 🪫
Suggestions given how to maintain Battery charge and be prepared when you come back. 
Disconnecting the terminals not an option on Battery located under rear seat.   Just use charger or have a fully charged starter pack , plug into jump start points under bonnet, start the car and keep in ready mode for 1 hour. 
This should not be a reason not to buy a hybrid Toyota.
They are the best cars to own and drive .

Could you get a family member or close friend to run the car for you maybe? Don't need to drive it but of course that would be more ideal - could just leave it running in READY mode for about 30 mins to an hour every 3-4 days. If it's enclosed like in a garage even better. On a public road just gotta keep an eye on it, but I like to sit inside and chill watching Youtube or whatever.

Leaving it in READY mode provides more effective charging than driving (holds Battery at 14.2V vs 12.9V)

I've read numerous reviews of solar panel trickle chargers being useless and in some cases actually draining the Battery.

The two I bought for my Yaris and MX5 have diodes that stop reverse energy flow and haven't damaged my batteries.  Amazon.
