Ok so maybe I am asking the wrong question here. . .

How can I disable this feature of "detecting" people / stuff in the car / left / forgotten ? 😆

As far as I know, it isn't possible. There could be something wrong with the car that's causing it to not lock, so I'd get the main dealer to investigate it.

I'm sceptical that your car is 'detecting' the bag and laptop in the boot. More likely to be a dodgy switch somewhere in the central locking making the controller think a door/boot not closed. Next time it does it go round the car and open/close all door and boot and try again.

On cars with keyless entry and push start button electronic devices can interfere with the car and cause issues. 
Not sure on this case though even if the car infotainment system connects to the laptop via bluetooth or wifi why would not let the car lock itself? 
The op can run more experiments and record a video will be nice 👌

Is this happening in the same place? Does it not happen anywhere else. I'm stabbing in the dark but could a WiFi signal from a router or mast be causing this. I once had it in my old Avensis when outside a hotel the key fob would not work. Anywhere else it worked fine.

At the end of the day, the car, being a 2023 model according to your profile, should still be within the new car warranty period, so book the car into your Toyota dealer for them to investigate the issue.

Hello, apologies about the delay, I went away on holiday.

In the end , I managed to solve the issue. I had to find the "seat detection" in the car settings and turn that off. Now when I put stuff in the car and/or boot, and try to lock it, it allows me to do so.
