On all my past cars, when I press the "speak" button on the steering wheel, it would take me to Google Assistant, but it takes me to the cars Voice recognition menu !!

If I press the blue icon Google button onscreen, it goes to Google Assistant!!

How do I change this !

Try long press of steering wheel button. That should take you to the voice assistant used by your connected phone.

Yes, that's what it does, I don't want that, I want Google assistant!! I'll show a photo of what I get onscreen when I get back to the car.

On my 21 Corolla, it's short-press for the car's own system, long-press to invoke Siri or Google, depending on your connected device. I've used a few different makes of car with a similar voice assist button fitted and they've all worked exactly the same way. I would estimate the long press takes 2-3 seconds of holding the button down.
