Well... I wait until my oil temp gets to about 75-80oC before giving it spirited driving!

You don't really want it going over 100oC for any length of time.

If you see oil temp shoot up suddenly, it's a tell tale sign for detonation.

Water temp... I've fitted a TRD sports thermostat, which starts cooling the car at 75oC as opposed to the stock 85oC. A cool engine is a happy engine. Our cars don't suffer too bad with water overheating as we have the rad front mounted away from any engine bay temperatures. If you are suffering then it might be worth looking into your system... i.e check for bubbles.

I would say to monitor your charge temps closer than your exhaust gas and turbo temps. Ideally with turbo'd cars, you don't want the charge temp to exceed 40oC. We are way off with the stock intercooler and mid-engined layout. Any increase in boost over standard with the stock IC in place is asking for some trouble. You will suffer from heat soak, and potentially detonation.

I'm running an HKS Type-S intercooler, with custom hard pipes to increase gas flow, and running at about 1.1 bar boost. My charge temps are below 40oC until I drive hard for any length of time. So even with uprated IC, you need to look at water injection and IC water spray to compensate for the lack of front mounted intercooler... better still... go with chargecooler and water injection.

Hope this helps answer some of your questions.
