Coolant Levels

Do the coolant levels change all the time on the VVTLI engines? Obviously they rise when hot, but mine seems to sit between max and min when cold and sits slightly under the max level when hot? Dealer says that they 'dump' out coolant when they get above max.

Can anyone tell me any more about the way these things work?

I've not checked it on my CTS but my old Pug306 had an overflow pipe at the top of the expansion tank. Like the overflow you get in a sink.
